    Scalloped Bacon Potatoes


    2 lbs (910 g) potatoes, diced
    salt & pepper to taste
    1 large onion, chopped
    1 teaspoon (5 ml) dried tarragon
    4 slices bacon, chopped finely
    1 cup (250 ml) light cream or milk
    2 ozs (57 g) cheddar cheese, grated

    Recipe




    Place half of the potatoes in a greased ovenproof casserole dish.

    Season well with salt & pepper.

    Sprinkle the potatoes with onion, tarragon & bacon.

    Then, cover with the rest of the potatoes, smoothing the top as level as possible.

    Pour the cream (or milk) over the potatoes, then cover with a piece of greased foil.

    Bake in a preheated 400ºF (200ºC) oven for 1 1/2 hours, or until the potatoes are almost tender.

    Remove the foil & sprinkle with the cheese.

    Return the dish to the oven, uncovered, for another 15 to 20 minutes until the casserole is lightly browned.

    Serves 4
