    Albacore Tuna Bake


    1 can Albacore water-packed tuna, drained
    3 2/3 ounces low-fat Swiss cheese, grated
    1 1/2 cups fresh spinach, chopped
    1/2 cup diced onion
    dash of salt
    2 eggs
    1 cup skim milk
    2 large plum tomatoes, thinly sliced

    Recipe




    Preheat oven to 350 degrees and spray 9-inch pie tin with cooking spray.

    Combine tuna, cheese, spinach, onion and salt.

    Transfer to pie tin, spreading evenly.

    In same bowl, whisk together the eggs and milk.

    Pour over tuna mixture.

    Bake 30 minutes, until set around edges.

    Arrange tomato slices around the outside, bake an additional 10 to 15 minutes until the tomatoes are slightly softened and knife inserted in middle comes out clean.

    Remove from oven and set aside for 10 minutes; then cut into six equal portions.
