    Corn Bread Taco Bake


    1 1/2 pound of ground beef
    1 pkg. of taco seasoning
    1/2 cup of water
    one 12 ounce can of whole kernel corn, drained
    1/2 cup of chopped green pepper
    one 8 ounce can of tomato sauce
    one 8 1/2 ounce pkg. of corn muffin mix
    1 can of French fried onions
    1/2 cup of shredded Cheddar cheese

    Recipe




    Brown meat; drain.

    Stir in taco seasoning, water, corn, green pepper and tomato sauce.

    Pour into 2 quart casserole.

    In a separate bowl, prepare corn muffin mix according to package directions, except add 1/2 can French Fried onions.

    Spoon muffin mix around outer edge of casserole.

    Bake, uncovered, at 400ºF. for 20 minutes.

    Top with cornbread, cheese and remaining onions.

    Bake 2 or 3 minutes longer
