    Chicken Stir Fry


    2 skinless, boneless chicken breasts
    2 medium sized onions
    2 celery stalks
    1 large red pepper
    1 large green pepper
    3 or 4 garlic cloves
    soy sauce
    pinch of ginger powder
    1 tsp sugar
    fresh ground black pepper
    garlic salt (optional)
    fresh mushrooms (I use about half a pkg)
    canola oil or corn oil
    corn starch

    Recipe




    Cut chicken breasts into small, bite size pieces, chop one of the garlic cloves..Mix chicken, garlic, some soy sauce & ground black pepper & marinate them all together, cover & refrigerate til you're ready to make the stir fry. (usually for about an hour).

    Chop the other ingredients & have them ready to cook. (including the other 2 garlic cloves & slice the mushrooms) Put a couple tbsps. of cooking oil in a wok or large frying pan.

    Place the marinated chicken in the pan & let it cook with some more soya sauce & a little water added.

    Add all the raw veggies, I add a lot more soy sauce, the ginger powder, sugar & water as needed, along with liberal black pepper & garlic salt.

    Place lid on wok or pan & let cook til tender. (About 10 mins), thicken with cornstarch & serve.

    Serve over instant brown or white rice.
