    Caribbean Jerk Chicken Chili


    1/2 pound Butter
    1 large Diced Onions
    3 Stalks of Diced Celery
    3 ½ Tablespoon Minced Garlic
    1 Tsp Cumin
    2 Tsp Chili Powder
    2 Tsp Jerk Seasoning
    1 teaspoon Salt
    1 teaspoon Black Pepper
    1 Tbls Chicken Base or 1 Qt. Chicken Stock
    3 Sm Cans Diced Tomatoes
    2 Cups Water
    2 Sm Cans Drained Black Beans
    1.5 pounds Pulled Chicken
    4 Tbls Brown Sugar

    Recipe




    Heat Butter and add vegetables.

    Sauté until tender.

    Add dry seasoning, add tomatoes and chicken base and water bring to a boil.

    Add black beans boil for 30 minutes.

    Add Chicken & brown sugar reduce heat and simmer to desired thickness.
