Chicken and Green Chili Chili
1 tablespoon canola oil
2 medium chopped onions
2 teaspoons minced garlic
1 tablespoon cumin
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 pounds boneless, skinless chicken thighs cut into 1/2 inch pieces
3 (15- to 16-ounce) cans rinsed great northern beans
2 (4- to 4.5-ounce) cans undrained chopped green chilies
2 cups fat-free chicken broth

In a Dutch oven, heat oil on medium.
Add onions and garlic; cook 4 to 5 minutes or until softened.
Stir in cumin, salt, cayenne pepper and chicken.
Cook 6 to 7 minutes, stirring occasionally, until chicken is lightly browned.
Stir in beans, chilies and broth.
Heat to boiling.
Reduce heat to medium-low.
Cover; cook 20 to 25 minutes, stirring occasionally, until chicken is no longer pink in center.
Sprinkle with cilantro and serve.
