Day After Chili
2 tablespoons vegetable oil
1 large green bell pepper, chopped
1 large onion, chopped
3 garlic cloves, minced
2 cans (16 ounces each) red kidney beans, drained
1 can (28 ounces) crushed tomatoes
1 can (15 ounces) tomato sauce
2 cups crumbled cooked hamburgers
2 cups coarsely chopped cooked hot dogs
1/4 cup chili powder
2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon black pepper Recipe
In a soup pot, heat the oil over medium-high heat. Add the bell pepper, onion, and garlic, and sauté for 5 to 6 minutes, or until the pepper and onion are tender.
Add the remaining ingredients; mix well. Reduce the heat to low, cover, and simmer for 30 minutes, stirring occasionally.
OPTIONS: Serve over rice and/or top with your favorite chili toppers like shredded cheese, chopped onions, sour cream, sliced scallions, or jalapeño peppers. And go ahead - add more or less of the burgers and dogs (whatever you've got on hand!) and make it hotter or milder by adjusting the chili powder. The choices are yours!
