Ginger Apple Crisp
1/3 cup corn flake crumbs
1/4 cup firmly packed brown sugar
3 tablespoons All Purpose or Unbleached Flour
2 tablespoons crystallized ginger, chopped, or 1 teaspoon ginger
2 tablespoons margarine or butter, melted
6 cups (6 medium) thinly sliced, peeled apples
2 tablespoons sugar
2 teaspoons lemon juice Recipe
Heat oven to 400 degrees F. Spray 2-quart casserole with nonstick cooking spray.
In small bowl, combine corn flake crumbs, brown sugar, flour and ginger; mix well. Add margarine; stir until well mixed.
Place apples in sprayed casserole. Add sugar and lemon juice; toss to coat.
Sprinkle apples with crumb mixture; press gently.
Bake at 400 degrees F. for 25 to 30 minutes or until apples are tender and mixture is bubbly.
Cool slightly. If desired, serve warm with ice cream.
