    Sweet Nectarine Nachos


    4 soft taco-sized flour tortillas
    ½ tsp. cinnamon
    2 tsp. sugar
    1 pound nectarines, chopped
    2 cups Vanilla pudding, Cook & Serve
    Water for wetting tortillas

    Recipe




    Prepare pudding as directed. Allow to set.

    Combine sugar and cinnamon in a small bowl and preheat oven to 350° F.

    Brush tortillas with water just until slightly moist. Sprinkle with sugar mixture. Cut each tortilla into 8 wedges.

    Spread wedges on a cookie rack and place in preheated oven. Bake for 10 minutes or until crispy.

    Serve as individual portions in wide-mouthed bowls. Spoon ½ cup pudding into the bowl and cover with ¼ of the chopped nectarines. Garnish with the “chips” around the edge of the bowl.

    Serves: 4 (Serving Size: 8 chips per person plus dip)

    Note: To make a lower fat recipe use fat-free or 1% milk in the pudding.
    Or substitute vanilla or fruit-flavored yogurt for the pudding.
