Cookie Berry Icebox Cake
2 1/2 cups heavy cream
Two 8 oz pkgs cream cheese
1 1/4 cups sugar
Forty two 3" chocolate chip cookies
1 1/2 pounds strawberries, hullled, chopped, plus halved strawberries
Recipe
In bowl, beat 2 cups cream until stiff peaks form.
In another bowl, beat cream cheese, sugar and remaining cream until smooth.
Fold whipped cream and cream cheese mixture together until combined.
TRACE 8" circle on parchment, cut out, invert onto plate. Arrange 7 cookies on parchment to fill circle.
Top with 1 cup cream mixture and 2/3 cup strawberries.
Repeat to make 6 layers, ending with cookies.
Wrap cake with plastic wrap, chill until set.
TO SERVE---
Stir cream mixture.
Unwrap cake, spread cream mixture on top, garnish with strawberry halves...
