    Dutch Berry Cake


    1/4 tsp salt
    2/3 cup low fat milk
    1/4 tsp cinnamon
    1/4 cup plus 2 tbs sugar or Splenda
    6 tbs unsalted butter, 4 tbs cut into pieces
    2/3 cup flour
    3 eggs
    1 1/2 tsp vanilla
    3 cups fresh or frozen mixed berries

    Recipe




    Heat oven to 450 degrees.

    In a skillet, heat 2 tbs butter.

    Add berries, 1/4 cup sugar and 1 tsp vanilla.

    Cook until berries are slightly softened.

    Transfer berries to a bowl.

    Wipe out skillet, place it in oven.

    In a bowl, stir together remaining sugar and cinnamon.

    In a bowl, whisk eggs until frothy.

    Whisk in milk, flour, salt and remaining vanilla until smooth.

    Remove skillet from oven, add remaining butter.

    Pour in batter, return skillet to oven.

    Bake until puffed and golden brown 20 min.

    Top with berries, sprinkle with cinnamon sugar.

    SERVE immediately...
