    Patsy's Carrot Cake


    * 2 cups sugar
    * 1 1/4 cups oil
    * 4 eggs
    * 2 tsp. cinnamon
    * 2 tsp. baking powder
    * 2 cups all pourpose flour
    * 1 cup chopped nuts
    * 3 cups grated carrots
    * 1 cup coconut

    Icing

    * 8 oz. softened cream cheese
    * 1/2 cup margarine
    * 2 tsp. vanilla
    * 1 box powdered sugar
    * pinch salt

    Recipe




    Cake

    Mix all together.

    Bake 350 degrees for 1 1/2 hour.

    Icing

    Mix all and ice cake


    You can make your cake in a 9x13 pan, or a bundt pan. (Bundt pan, grease and flour.)
