    Berry Cheesecake


    6 strawberries, halved
    1 cup sour cream
    6 drops red food color
    1/3 cup flour
    4 eggs
    2 1/2 eight oz pkgs cream cheese, softened
    3 tbs butter, melted
    30 vanilla wafers, finely crushed
    2 tbs powdered sugar
    1 tsp cornstarch
    1/8 tsp salt
    1 tsp vanilla
    3/4 cup sugar
    10 oz pkg frozen sweetened strawberries, thawed
    1/4 cup ground pecans

    Recipe




    HEAT oven to 350 degrees. Spray bottom of a springform pan with cooking spray.

    Mix vanilla wafer crumbs, pecan crumbs and butter in a bowl.

    Press mixture in bottom of pan.

    Bake 7 min. or until golden brown.

    Remove crust from oven, spray sides of pan with cooking spray.

    Place strawberries in a mesh strainer over a saucepan, press strawberries to remove as much liquid as possible.

    Set liquid in saucepan aside.

    Place strawberries in a food processor, process berries until smooth.

    Beat cream cheese and sugar until smooth.

    Add eggs, beat well.

    Beat in vanilla and pureed strawberries.

    Add flour and salt, beat until mixed.

    Mix in food color until desired color.

    Pour filling over crust.

    BAKE 40 min. or until most of the cheesecake is set.

    Mix sour cream, powdered sugar and 1/2 tsp vanilla together in a bowl.

    Spread mixture over top of cheesecake.

    Bake an additional 5 min.

    Turn oven off.

    Open oven door partway, leave cheesecake in oven 30 min.

    Remove cheesecake to a cooling rack.

    Cool 1 hour.

    Cover with foil, refrigerate 8 hours.

    Stir cornstarch into strawberry liquid in saucepan.

    Cook until bubbly and thick.

    When ready to serve, top each serving with 1/2 of a strawberry, drizzle with strawberry syrup, then SERVE...
