    Cherry Cobbler


    1/2 cup butter
    1 cup all purpose flour
    2/3 cup white sugar
    1 tsp baking soda
    1 cup buttermilk
    3 cups pitted fresh cherries(if using sweet cherries, lower sugar amount a little if you like)
    1 tbsp all purpose flour
    1/2 cup sugar
    1 tbsp lemon juice
    1 tsp lemon zest

    Recipe




    Preheat oven to 350 degrees.

    Place butter in a 9x13x2 inch baking dish.

    Place butter in the dish, and place in oven to melt.

    Remove when butter has melted, about 4-5 minutes.

    Mix together, 1 cup of flour and 2/3 cup sugar, and baking powder.

    Mix in the milk until well blended, then pour batter into the pan over the butter.

    Do not stir.

    Place cherries into a bowl and toss with the left over 1/2 cup sugar, the lemon zest and juice, and the 1 tbsp flour.

    Spoon the cherry mixture evenly over the batter and again, do not stir.

    Bake for 50 to 60 minutes until golden brown and passes the toothpick test (poke with toothpick in center of cobbler dough and it comes out clean, it's done).
