Chocolaty Fruit Pies
Vanilla ice cream
1 1/2---14 oz pkgs piecrust dough, 3 pieces
1 1/2 oz semisweet chocolate, chopped
3 pounds cherries pitted, halved
1 tbs vanilla
3/4 cup sugar
Heavy cream
Flour
6 tbs unsalted butter, cut into pieces
3 tbs cornstarch
Salt
1/2 tsp grated orange zest
1/2 cup light rum or fruit juice
Recipe
Whisk sugar, rum, vanilla, zest and 1/4 tsp salt in a bowl until sugar dissolves.
Add cherries and cornstarch, toss, set aside until juicy.
Line a baking sheet with foil, coat with cooking spray.
Place 6 tart dishes on pan.
Add 3/4 cup cherries to each dish, top each with 1 tbs butter and 2 tsp chocolate.
Transfer remaining cherry mixture to a pan, add 1/2 cup water, simmer until thickened.
Divide among dishes, cool.
Dust a surface with flour, cut out 6 circles from piecrust, 1/2" bigger than tart dishes.
Place on another baking sheet, chill.
Heat oven to 375 degrees.
Top each dish with a piece of dough, pressing edge to seal, pierce several times.
Bake 45 min. then brush each pie with cream, sprinkle with sugar.
Continue baking until golden 15 more min.
SERVE WITH ICE CREAM...
