    Heirloom Soda Cracker Pie

    Source of Recipe

    Richard Lee Holbert

    Recipe Introduction

This simple pie recipe has been passed down from generation to generation.
Heirloom Soda Cracker Pie is a pie similar to those made during the
Depression when apples and other fruits were scarce.
Instead, dates, nuts, soda crackers and other ingredients give this pie
    its texture and sweetness.
This easy dessert recipe is also very low-cost because it only uses 6
    ingredients.
Once the pie sets up, the ingredients hold together on their own so you
don't even need a pie crust.
It tastes great with ice cream or whipped cream.

    List of Ingredients

    Heirloom Soda Cracker Pie

    12 soda crackers, crumbled fine
    1 cup brown sugar
    1 teaspoon vanilla
    12 dates, chopped
    3 egg whites
    1 cup nuts, chopped

    Recipe

Preheat oven to 350 degrees F.

    Beat egg whites until foamy.

Gradually add brown sugar and beat until the peaks stand up stiff.

Combine crackers, dates, and nuts in separate bowl and gently fold into egg whites.

Add vanilla last and pour into a greased 9-inch pie pan.

Bake for 30 minutes or until brown.

Can be served with ice cream or whipped cream.
