    This one's a bit different; sort of like eating your vegetable as a dessert. But you'd be surprised at just how yummy it really is!

    List of Ingredients




    Corn Custard



    5 fresh eggs at room temperature
    1/2 tsp each: nutmeg, cinnamon, ginger, allspice, ground cloves
    1 1/2 cups sugar--may use sugar substitute if needed
    1 tsp pure vanilla
    2 1/2 cups fresh or frozen corn
    1 pint half and half (may be omitted)
    2 cups milk (1% may be used)
    1/2 stick butter, melted

    Recipe




    Preheat oven to 325 degrees.

    In a large bowl, mix eggs, milk and spices with electric mixer until eggs are fluffy.

    Oil a 3 quart baking dish.

    Add egg mixture to dish, then add corn.

    Place baking dish in a pan of water (about 1 inch of water).

    Bake until knife comes out clean, about 45 minutes.
