    Custard Fruit Pie


    CRUST---

    1/2 tsp salt
    1/3 cup vegetable shortening
    1 cup plus 2 tbs flour

    FILLING---

    2 eggs
    1 tbs butter
    3 cups peeled diced peaches
    3 tbs flour
    1 cup plus 3 tbs sugar

    PREPARE CRUST---

    Heat oven to 375 degrees.

    In bowl, mix flour, salt, shortening and 2 tbs water until dough begins to form.

    Knead until dough comes together.

    Shape into a ball.

    Dust with flour, roll between 2 sheets wax paper to 12" round.

    Ease dough into 9" pie plate, crimp edge.

    Chill.

    PREPARE FILLING---

    Toss peaches with 3 tbs sugar, let stand 5 min.

    In blender, place butter, flour, eggs, and remaining sugar, blend until smooth.

    Stir egg mixture into peach mixture, pour into pie crust.

    Bake 55 min. or until top is golden.

    Cool.

    Chill 1 hour before SERVING...

    MAKES 8 SERVINGS.
