Grecian Style Baked Fish
6 fish filets ¾ to 1 inch thick
3 to 4 tablespoons olive oil
3 medium onions, diced
2 bay leaves
1/3 bunch parsley
5 garlic cloves, minced
1 /2 cup white wine
5 ¾ cups tomato juice
2 teaspoons sugar
salt and pepper
optional: ½ cup crumbled feta cheese

1. spray a large baking dish with non- stick oil and place fish in a single layer. hold for later.
2. In a large sauce pan, saute onions with bay leaves in olive oil until clear (use medium-high heat)
3. Add parsley and garlic, cook 2 to 3 minutes.
4. Add wine, bring to boil, add tomato juice and sugar. bring back to light boil and turn heat off. taste for salt and pepper.
5. Pour sauce over fish, top with optional feta cheese crumbles and 8 lemon slices.
6. Bake uncovered at 350 degrees for 25 to 35 minutes; fish is ready when it is white and flaky.
