    Better Than Ever Beef Enchiladas


    1/2 lb (228 g) extra lean ground beef
    1/2 cup chopped green peppers
    1/2 cup chopped red peppers
    2 cups salsa, divided
    1/2 cup Kraft Tex Mex Shredded Cheese, divided
    2 tablespoons Kraft Calorie-Wise Zesty Italian Dressing
    8 - 6 inch flour tortillas
    2 tablespoons chopped cilantro

    Preheat the oven to 400ºF.

    Brown the meat with the bell peppers in a large non-stick skillet.

    Stir in 1 cup of the salsa & let the mixture simmer for 5 minutes, stirring occasionally.

    Remove the skillet from the heat & stir in 1/4 cup of the Tex Mex cheese.

    Spread 1/4 cup of the remaining salsa onto the bottom of a greased 13 x 9 inch baking dish.

    Brush the dressing lightly over both sides of the tortillas.

    Stack 4 tortillas & wrap in a large sheet of waxed paper.

    Microwave on HIGH for 10 to 20 seconds or just until they are warmed.

    Immediately spoon 1/3 cup of the meat mixture down the centre of each of the warm tortillas.

    Place the prepared tortillas, seam-side down, over the salsa in the dish.

    Repeat with the remaining 4 tortillas & meat mixture.

    Top with the remaining salsa.

    Cover the baking dish with foil.

    Bake in the preheated oven for 20 minutes or until they enchiladas are heated through.

    Uncover the baking dish & top with the remaining cheese.

    Bake for another 2 to 3 minutes or until the cheese is melted.

    Serve topped with the cilantro.
