    The BEST Chicken Enchiladas


    1 1/2 lbs Chicken, cooked and shredded
    10 flour tortillas
    4 cups cheese (prefer the mexican cheese mix)
    1 big can RED enchilada sauce
    1 small can chopped green chiles
    1 can Rotel tomatos w/ chiles
    1 can chili beans
    1/2 bag frozen corn

    Recipe




    Mix the chicken, corn, chiles, tomatos and beans in a large bowl.

    In a baking dish, spoon some enchilada sauce into the bottom, enough that it will coat your tortillas as you roll them.

    Place tortilla in pan, fill w/ 2 HEAPING spoonfulls of the chicken mix, a handfull of cheese, then roll up, squishing it against the side of the pan.

    Continue until your pan is full (I ended up using one big pan and one smaller one)

    Top with enchilada sauce and the remainder of the cheese. Bake at 350 for 35-40 minutes.
