BBQ Shrimp Quesadilla
5oz peeled shrimp
2oz Louisiana style shrimp BBQ sauce
20z sliced smoked Gouda cheese grits
2oz roasted red bell pepper
1t chili powder
1oz melted butter
1 large non-stick skillet
2oz fresh guacamole
2oz fresh Pico de Gallo
2oz sour cream
1 ea 10” flour tortilla
Recipe
Make BBQ sauce in skillet and cook shrimp in sauce.
Heat non-stick skillet.
Baste one side of flour tortilla with butter, sprinkle with chili powder and place butter side down in skillet.
Assemble quesadilla quickly with cheese down fist, layering roasted red pepper.
Next, layer BBQ shrimp. Fold quesadilla when cheese begins to melt.
Flip quesadilla on both sides to ensure it is heated all the way through.
Set aside two minutes.
Slice into quarters and serve with guacamole, Pico de Gallo, and sour cream.
