Give your family a taco makeover with this
quick & easy recipe that adds fish fillet, corn & a lettuce mixture to
corn tortillas.

Easy Fish Tacos
4 cups shredded iceberg lettuce
1/4 cup mayonnaise
2 tablespoons lime juice
6 crunchy fish fillets (such as Gorton's)
10 corn tortillas
1 cup frozen corn kernels, thawed
1 container purchased fresh salsa (optional)
Recipe
Preheat the oven to 425ºF.
In a small bowl, stir together the lettuce, mayonnaise & lime
juice.
Set the bowl aside.
Bake the fish in the preheated 425ºF oven, according to the package directions.
Wrap the tortillas in aluminum foil & place them in the oven for the final 10 minutes of the cooking time for the fish.
Remove the fish from the oven & cut each fillet into 6 chunks.
Microwave the corn for 1 minute.
Place 3 to 4 chunks of fish in each tortilla.
Top with about 2 tablespoons of the lettuce mixture & 1 tablespoon of corn.
Serve the tacos with some fresh salsa, if desired.
