    These are a Mediterranean variation on the Mexican classic with just a little Greek touch. Quick and easy to prepare, they make a great appetizer or snack

    List of Ingredients




    Greek Chicken Quesadillas


    For the quesadillas:

    6 oz boneless, skinless chicken breast cooked and sliced
    1 roma tomato, cut in half then sliced thinly
    1/8 red onion, thinly sliced
    1/4 European seedless cucumber, cut into slices
    1/3 small
    red bell pepper, seeded and sliced

    Recipe




    Place the sliced chicken breast, tomato, onion, cucumber, green bell pepper, red bell pepper, pepperoncini, kalamata olives on half of the flour tortilla. Season with sea salt, fresh cracked pepper and dried oregano. Add the chopped fresh herbs and spread the cheeses over all the ingredients.

    Fold the empty half of the tortilla over the ingredients and press gently. Heat the olive oil in a non stick large pan and pan fry the quesadilla on both sides till is golden brown and the cheese is melted. Let sit a few minutes at room temperature so the cheese will settle, cut in slices and serve with tzatziki sauce or your favorite sauce.
