    Swedish Sandka (Brandy Butter Pound Cake)

    Swedish Brandy Butter Pound Cake (Sandkaka)


    Fine dry bread crumbs for coating the baking pan
    1 cup butter, softened or at room temperature
    1 cup sugar
    4 eggs
    2 tbsp brandy
    2 cups cake flour
    2 tsp baking powder
    4 tbsp water
    powdered sugar

    Recipe


    Butter a 9 inch fancy tube-type pan.

    Dust with breadcrumbs.

    Preheat the oven to 350 F.

    In a large bowl, cream the butter and sugar until smooth and blended.

    Add the eggs and brandy.

    Beat until light and lemon colored.

    Combine the flour and baking powder.

    Mix into the cake batter.

    Beat until smooth and light.

    Add the water a tablespoon at a time.

    Pour into the prepared baking pan.

    Bake for 45 to 50 minutes or until a toothpick inserted into the center comes out clean.

    Remove from the oven.

    Allow to cool in the pan for 5 minutes.

    Turn out onto a rack and cool completely.

    Dust with powdered sugar before serving.

    Makes 12 servings
