    Swedish Sugar Cake (Sokerkaka)


    2 cups flour
    1 1/4 cups sugar
    2 tsp baking powder
    1 tsp freshly pulverized cardamom seed
    1/2 tsp salt
    3 eggs
    1 1/2 cups whipping cream
    vanilla wafer crumbs for coating the pan

    Recipe




    Measure the flour, sugar, baking powder, cardamom, salt, eggs, and whipping cream into a large mixer bowl.

    Using an electric mixer, blend for 30 seconds on low speed.

    Scrape the bowl often.

    Beat for 3 minutes at medium speed.

    Butter a 9-inch tube-type fancy mold.

    Dust with the vanilla wafer crumbs.

    Pour the batter into the prepared pan.

    Bake at 350 F for 55 to 60 minutes or until a toothpick inserted into the center comes out clean.

    Remove from the pan immediately.

    Cool on a wire rack.

    Makes 12 servings
