    Baked Fish With Vegetables


    2 POUNDS FRESH FISH FILET 1 INCH THICK
    BAKING DISH LARGE ENOUGH TO HOLD FISH IN SINGLE LAYER
    SEASONED SALT SUCH AS LAWREYS OR TONY’S
    2 TABLESPOONS LEMON JUICE
    1 SMALL RED ONION, THIN SLICED
    1 SMALL GREEN BELL PEPPER, THIN SLICED
    1 LARGE TOMATO, SEEDED, COARSE CHOPPED
    2 CLOVES GARLIC, PEELED, AND MINCED FINE
    ½ CUP CRUMBLED FETA CHEESE
    2 TABLESPOONS OLIVE OIL
    1 TEASPOON DRIED OREGANO LEAVES
    1 TEASPOON DRIED BASIL LEAVES
    1/2 CUP WHITE WINE

    Recipe




    1. PREHEAT OVEN TO 450 DEGREES

    2. LIGHTLY OIL BAKING DISH

    3. SPRINKLE FISH WITH SEASONED SALT AND LEMON JUICE AND PLACE IN BAKING DISH

    4. LAY ONIONS, GREEN PEPPERS, TOMATOES AND GARLIC ON TOP OF FISH

    5. SPRINKLE CRUMBLED FETA ON VEGETABLES

    6. SPRINKLE OLIVE OIL, OREGANO AND BASIL ON TOP OF VEGETABLES

    7. POUR WINE AROUND FILLETS, NOT ON TOP

    8. BAKE UNCOVERED 20 TO 25 MINUTES UNTIL FISH IS FLAKY

    9. REMOVE FROM OVEN, LET IT SETFOE 2 MINUTES AND SERVE
