    Baltic Fish


    4 5-oz firm whiting filets
    2 large potatoes, peeled & sliced
    3 cloves garlic -- pressed or minced
    salt & ground black pepper to taste
    1/4 cup fresh lemon juice
    1 cup nonfat sour cream
    2 tablespoons prepared horseradish
    1 tablespoon chopped fresh dill or 1 tsp dried
    1 small red onion -- thinly sliced or 1 cup scallions

    Optional garnish:

    fresh dill springs
    thin slices of pimiento or red bell peps

    Rinse the fish, pat dry, and set aside. Boil the pots and garlic in water to cover until the pots are tender, about 10 min.

    Drain and mash with a potato masher or heavy wooden spoon.

    Add Salt & Pepper to taste.

    Preheat the oven to 350F.

    Evenly spread the mashed pots on the bottom of a 5"x8" baking dish prepared with cooking spray or a very light coating of oil.

    Use small oval casseroles for individual servings.

    Lay the fillets on top of the pots and pour on the lemon juice.

    In a small bowl, combine the sour cream, horseradish, and dill and spoon it evenly over the fish.

    Top with the red onion slices or scallions.

    Cover and bake for about 35 min, until the fish flakes easily with a fork.

    Use a few dill sprigs and slices of pimiento or bell pepper to garnish each serving.
