Beer Batter Fish Fry
1/2 cup beer
1/2 cup water
1/2 tsp. salt
1/2 tsp. freshly ground pepper
1/8 tsp. grated nutmeg
1 tsp. minced garlic
3/4 cup all-purpose flour
1/4 cup cornstarch
Dash of hot red pepper sauce (OPT)
Peanut oil for frying
8 whitefish fillets or 16 perch fillets ( or other fish that’s not too thick ) Recipe
1) Combine the first 9 ingredients in a shallow bowl and beat well with a whisk. Fill a deep electric fry pan with oil to 1/4 to 1/2 Inch deep. ( Or use a commercial fryer according to the instructions.) Heat the oil to 375 degrees.
2) Pat the fish fillets dry, coat thoroughly with the batter and drop fish carefully, with tongs, into the hot oil. Cook fish about 10 to 15 minutes, depending on the thickness of fish, until golden. Serve with tarter sauce.
