Blackened Snapper
2 tbls. paprika
2 tps. cayenne pepper
1 1/2 tps. ground white pepper
1 1/2 tsp. ground black pepper
1 tbs. salt
2 tsp. onion powder
2 tsp. garlic powder
1 tsp. dried thyme
1 tsp. dried oregano
4 (6 ounce) fillets red snapper
1 1/2 cups butter, meltedRecipe
In a small bowl, mix together spices.
Heat a large cast iron skillet over high heat for 10 minutes.
Dip fish in butter and sprinkle woth seasoning mixture.
Place the fillets in the hot skillet.
Pour 1 tbs of butter over each fillet.
Cook until the coating on the underside turns black, 3 to 5 minutes.
Turn the fish over.
Pour another tbs of butter over the fish, and cook 2 minutes or until fish flakes easily with a fork.
