Chicken Fried Cod
3/4 pounds cod fillet, cut into 2" pieces
1/2 cup buttermilk
1/2 teaspoon paprika
1/4 teaspoon dried sage
1/4 teaspoon dried rosemary
1/4 teaspoon dried thyme
1/4 teaspoon grated nutmeg
1/4 teaspoon ground allspice
1/2 cup flour
1/2 teaspoon salt, or to taste
fresh ground black pepper

1. In a bowl, combine the cod with the buttermilk and herbs and spices. Soak at room temperature for at least 1 hour.
2. In a shallow bowl, mix together the flour, salt and pepper to taste.
3. Fill a medium skillet halfway with the oil, and heat until the oil reaches about 350 degrees.
4. Remove the cod from the buttermilk, and dredge in the flour.
5. Gently drop into the oil and fry until golden brown and crispy, turning once, about 3 minutes a side.
6. Drain on paper towels and serve immediately.
