    Cilantro and Lime Mahi Mahi


    Ingredients
    2 Shallots, chopped
    1/4 Cup chopped fresh cilantro
    1/2 Cup lime juice
    2 Tbsp. olive oil
    1/4 Tsp. salt
    1/4 Tsp. freshly ground pepper
    4 4-oz. mahi mahi fillets
    Fresh cilantro sprigs (optional)

    Recipe




    Combine shallots, cilantro, lime juice, olive oil, salt and pepper in medium bowl. Pour over mahi mahi. Preheat grill to medium-high; coat grill rack with nonstick cooking spray.

    Grill on rack, covered with grill lid, 6 to 8 minutes or until fish flakes with a fork. Garnish with fresh cilantro, if desired.
