    Crawfish Etouffee


    1 tsp Salt
    1 tsp Cayenne
    1 tsp White pepper
    1 tsp Black Pepper
    2 tsp Basil
    1 1/2 tsp Thyme
    1/3 cups Onions, Chopped
    1/3 cups Celery, Chopped
    1/3 cups Green Bell Peppers, Chopped
    1/4 # Butter
    1/4 Cups Flour
    1 # Crawfish tails
    1/2 gallon Seafood Stock
    2 Tbs Worcestershire sauce

    Recipe



    Make a med-dark roux with butter and flour.

    Add onions, celery, green bell peppers, and crawfish tails.

    Cook for five minutes and add seasonings.

    Add stock and Worcestershire sauce cook for 20 minutes on low heat.

    Serve over rice.
