Crawfish Jambalaya

4 oz. bacon grease
2 oz. butter (1/2 stick)
1 lb. andoulle sausage (sliced)
1 1/2 cups celery (diced)
1 1/2 cups onions (diced)
1 1 /2 cups green pepper (diced)
2 oz. garlic (minced)
1 tsp thyme (dried)
1 tbsp dry english mustard
1 tbsp white pepper
1 tbsp ground cumin
1 tsp black pepper
2 oz. crawfish base
32 oz. crushed condensed tomatoes
12 oz. your favorite beer

In a 4 quart pot melt butter and bacon grease at medium heat and add onions, celery, bell peppers, garlic, sausage and dry spices.
Saute until lightly browned, Ass the beer and crawfish base and let simmer 10 minutes.
Add crushed tomatoes and simmer another 10 minutes over lower heat.
Add crawfish and cooked rice to serve.
