Tuna with Artesian greens and citrus fruit
Served with a ginger and orange dressing
4 cups Artesian greens
1 tbsp. Olive oil
12 oz. Tuna fillet
2 tbsp. Cajun seasoning
8 Orange slices (No skin)
8 Kiwi slices
4 Grapefruit slices (No skin)
Fruit relish:
¼ cup Diced pineapples
¼ cup Diced honey dew
¼ cup Diced cantaloupe
2 Strawberry diced
½ tsp. Honey
½ tsp. Cilantro chopped
½ tsp. Fresh mint chopped
½ tsp. Lime juice
Dressing:
2 tbsp. Pickled ginger
1 tbsp. Fresh mint
2 tsp. Fresh garlic
1 cup Orange juice
2 tsp. Soy sauce
1 tbsp. Sesame seed oil
2 tbsp. Rice vinegar
1 pinch Chinese five spices
1 tsp. Sugar
Salt and pepper to taste
1 tsp. Honey
½ Juice from fresh lime
½ tsp. Ginger powder
Recipe
Bronzed Tuna
Clean and cut artesian lettuce wash and put aside in the refrigerator.
Brush tuna fillet with olive oil and coat with Cajun seasoning.
Make dressing by adding all ingredients in the blender and blend well.
Clean and slice all fruit.
Dice the fruit for the relish and season with lime juice, chopped mint and cilantro.
Bronze the tuna in a hot cast iron pan on all sides for ½ minute
Place lettuce on plate
Place fruit relish around lettuce and the sliced fruit on top.
Slice tuna fillet and arrange on top of lettuce.
Sprinkle dressing over tuna and lettuce.
