Asian Inspired Mussels
1 cup red pepper, cut into 3/8 inch dice
1 cup red onion, cut into 3/8 inch dice
1/4 cup olive oil
1 tablespoon minced garlic
2 tablespoons minced ginger
2 teaspoons curry powder
1 tablespoon finely chopped Thai peppers
1 - 28 oz can diced plum tomatoes with juice
2 cups drained & rinsed canned black beans
1/2 cup chopped fresh cilantro
2 tablespoons tomato paste
6 mint leaves
2 tablespoons lemon or lime juice
3 lbs cleaned mussels
crusty bread to serve
Recipe
In a 12 inch skillet with high sides, saute the red pepper & red onion in the olive oil over medium heat for 3 minutes.
Add the garlic, ginger, curry powder & Thai peppers to the skillet.
Cover & cook for 2 minutes.
Add the plum tomatoes, black beans, cilantro, tomato paste, mint leaves & the lemon (or lime) juice.
Blend together.
Let the mixture simmer for 5 minutes.
Add the mussels to the tomato mixture.
Cover & cook for 5-7 minutes, or until the shells open.
Serve at once with crusty bread.
