    Apple Pie In A Jar


    * 7 cups tart baking apples, peeled, cored, thinly sliced
    * 2 tablespoons lemon juice
    * 1 cup sugar
    * 4 tablespoons flour
    * 1 teaspoon cinnamon
    * 1/4 teaspoon nutmeg
    * 2 9-inch, unbaked double pie crusts
    * 8 half-pint canning jars or 8 oz custard cups

    Recipe




    Peel, core and thinly slice apples; toss with lemon juice.

    Mix together sugar, flour, cinnamon and nutmeg; sprinkle over apples and toss to coat.

    Set aside.

    Place unbaked pie crusts on lightly floured surface.

    Using the lid from canning jars as a guide cut 8 circles from pie crust (save scrapes for tops of jars).

    Roll each circle to slightly thin pie crust.

    Press each circle into the bottom and sides of each jar so inside of jar is completely covered.

    Evenly divide pie filling among jars, filling jars 2/3 full.

    Top each jar with one of the following:

    Lattice top -

    Press pie crust scrapes together into a ball and roll out on a lightly floured surface.

    Cut thin strips of pie crust (approximately 1/2-3/4 inch wide by 3 ½-4 inches long).

    Place 3 strips horizontally across top of jar and 3 strips vertically across jar; weave strips together and press edges over the rim of the jar.

    Brush with beaten egg and sprinkle with sugar. (may wish to use additional pie crust)

    Capped Crust- press pie crust scrapes together into a ball then roll out on a lightly floured surface.

    Use jar lid as a guide cut circles of pie crust.

    Place circles of pie dough on each jar and gently press edges down inside rim of jar; cut 2-4 vent holes in top. Brush with beaten egg and sprinkle with sugar if desired.

    Crumb Topping -

    Mix together until crumbly 1/4-cup brown sugar, 1/4-cup flour, 1/4-teaspoon cinnamon, 2-tablespoons uncooked rolled oats and 3-tablespoons softened butter.

    Sprinkle on top of jars.

    Place jars on a baking sheet in cold oven, set oven temperature to 375 degrees and bake for 45-60 minutes or until tops are golden brown and filling bubbly.

    Serve warm or cold with a slice of cheddar cheese.
