    Spicy Black Beans and Quinoa


    1 tbsp extra virgin olive oil
    1 small yellow onion, chopped
    4 frozen soy "suasage" links, thawed, very thinly sliced into coins (optional)
    3 large cloves garlic, chopped
    1 large vine-ripened tomato, diced
    1 (15-ounce) can organic black beans, drained (do not rinse)
    1/2 cup low-sodium vegetable or organic chicken broth
    1/4 cup red or black seedless grapes, thinly sliced
    3/4 teaspoon cayenne pepper
    3/4 teaspoon sea salt, or to taste
    2 teaspoons finely chopped fresh thyme or oregano
    1 tbsp chopped fresh flat-leaf parsley
    3 cups cooked quinoa, warm
