    Classic Holiday Cranberry Nut Bread


    3 cups granulated sugar
    1 tablespoon grated orange rind
    2 teaspoons baking powder
    1 teaspoon baking soda
    1 teaspoon cinnamon
    3/4 teaspoon salt
    1/3 teaspoon ginger
    1/4 teaspoon allspice
    1/8 teaspoon ground cloves
    1 cup vegetable shortening
    1 cup orange juice
    2/3 cup light molasses
    1/3 cup Canola oil
    4 large eggs
    1 1/2 cups fresh or frozen cranberries
    1/2 cup shredded carrots

    2/3 cup chopped pecans

    Recipe




    Preheat oven to 350 degrees. Grease and flour a 10-inch tube pan.

    In a bowl, mix together flour, sugar, orange rind, baking powder, baking soda, cinnamon, salt, ginger, allspice and cloves. Add shortening, orange juice and molasses. Beat 2 minutes with an electric mixer at medium speed, mixing thoroughly. Add eggs and Canola oil; beat 2 minutes more. Stir in cranberries, carrots and pecans.

    Pour into pan; bake 1 hour or until a toothpick inserted in the center comes out clean.

    Makes 8 to 10 servings
