Fantastic Green Rice Dish
1 cup uncooked white rice
1/2 cup shredded Cheddar cheese
1 small onion, grated
2 eggs, beaten
1/4 cup butter, softened
1 cup fresh parsley
1 1/2 cups milk Recipe
1 Preheat oven to 250 degrees F (120 degrees C).
2 In a saucepan bring 2 cups of water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
3 To the cooked rice add cheese, onion, eggs and butter. Mix well and gently stir in parsley and milk. Transfer to a 2 quart casserole dish.
4 Bake in preheated oven for 1 1/2 hours.
Makes 4 to 6 servings
