    Green Eggs & Ham (St. Patrick's Day)


    4 eggs
    1 teaspoon butter
    2 teaspoons prepared pesto
    salt & pepper
    cherry tomatoes, cut in half for garnish
    4 slices of 1/4 inch thick sliced ham

    Recipe




    Melt your butter in a small sauté pan on medium heat.

    Add your eggs & stir.

    Add the pesto & stir again to incorporate.

    The secret to the best scrambled eggs is not to mess with them too much.

    Just let them settle in & use a wooden spoon (if you have one) to mix them up so they form large clumps.

    Season the eggs with salt & pepper when they get to the consistency you like them.

    Heat your ham while the eggs cook.

    You can do this in a warm oven or in a separate sauté pan or even the microwave.

    Serve the ham under the eggs or on the side.
