Jolly's Sausage Stuffing
2 quarts cubes of day-old bread with crusts cut trimmed off and discarded
1/2 pound sausage meat
1/2 cup butter
1 cup finely chopped onions
3/4 cup finely chopped celery (leave the leaves on)
3/4 teaspoon dried thyme
1 teaspoon ground sage
Salt and freshly ground black pepper Recipe
Preheat oven to 350 degrees. Spread the bread cubes on a baking sheet and bake until dried. Do not brown or overcook. Keep your eye on them as they will turn quickly depending on the size and shape of the cube.
Brown the sausage in a skillet until it loses color. Stir the meat often. Pour off most of the fat but reserve a little.
Melt the butter and cook the celery and onions until the onions are transparent. Add the sausage, reserved fat, bread cubes, herbs and season to taste. Mix well and let cook before stuffing the turkey about 10-15 minutes. If cooking in a baking dish instead of stuffing the turkey, cook for 30-40 minutes at 350 degrees.
Enough for a 10-12 pound turkey
