    BBQ Cheddar Meatloaf


    2 lbs. lean ground beef
    3 slices white bread, torn into small pieces
    2 eggs
    1/4 cup prepared yellow mustard
    1 tsp. salt
    1/8 tsp. black pepper
    2 cups (8 oz.) shredded sharp cheddar cheese
    1/4 cup chopped fresh parsley
    1 cup barbecue sauce

    Recipe




    Preheat oven to 400.

    Coat a 7x11" baking dish with cooking spray.

    In a medium bowl, combine ground beef, bread, eggs, mustard, salt, pepper.

    Mix with your hands until well blended.

    Place on a 12x16" piece of wax paper, pat firmly into a 10x12" rectangle.

    In a small bowl, combine cheese, parsley, mix well.

    Sprinkle cheese mixture evenly over ground beef mixture.

    Roll up jelly-roll style, starting from short end, by lifting with wax paper, removing paper as you roll.

    Seal end well.

    Place seam-side down in prepared baking dish.

    Pour barbecue sauce over roll, bake 55-60 minutes, or until no pink remains in beef, juices run clear.

    Remove from oven, allow to stand 10 minutes.

    Slice, serve.
