    Brown Sugar-Dried Cherry-Walnut Meatloaf


    canola oil, for greasing pan
    1/2 cup brown sugar, packed
    1/2 cup ketchup
    1 1/2 lbs lean ground beef
    3/4 cup milk
    2 eggs
    1 1/2 teaspoons salt
    1/4 teaspoon ground black pepper
    1 small onion, chopped
    1/4 cup dried tart cherries
    1/4 cup finely chopped walnuts
    1/4 teaspoon ground ginger
    1/4 teaspoon ground cinnamon
    3/4 cup saltine crumbs, finely crushed

    Recipe




    Preheat the oven to 350ºF.

    Lightly grease a 9 x 5 inch loaf pan.

    (Canola oil or other vegetable oil that does not have flavor is good for greasing.)

    Press the brown sugar into the bottom of the prepared loaf pan & spread the ketchup over the sugar.

    In a mixing bowl, mix thoroughly all the remaining ingredients & shape into a loaf.

    Place the meatloaf on top of the ketchup.

    Bake for 1 hour, or until juices are clear, making sure that a meat thermometer inserted in the center of the loaf registers 165ºF.

    Allow the meatloaf to stand for 5 to 10 minutes before slicing.
