    Bacon Burgers


    1 lb. ground cooked ham
    1 c. fresh breadcrumbs
    1 onion, finely chopped
    pinch of dried mixed herbs
    salt and pepper
    1 egg, beaten
    4 slices bacon

    Sauce:
    2 T. margarine
    1 slice bacon, chopped
    1 sm. onion, sliced
    1 sm. carrot, sliced
    1/4 c. flour
    2 c. stock
    1/4 c. mushrooms, sliced
    1/4 c. tomato paste
    salt and pepper

    Recipe




    Sauce: Melt margarine in saucepan and fry bacon, onion and carrot for 1 to 2 min.

    Stir in flour and cook over low heat until it turns golden brown.

    Remove from heat and gradually stir in stock.

    Add the mushrooms.

    Bring to a boil, stirring all the time, and simmer for 20 min.

    Add the tomato paste and seasoning and simmer for 5 min. more.

    Strain.

    To make burgers:

    Mix together the ham, breadcrumbs, onion, mixed herbs and seasoning and bind with egg.

    Turn onto a floured board and divide into four.

    Shape into burgers.

    Wrap a slice of bacon around each burger and place in an oven proof dish.

    Cover with the sauce.

    Bake in a 375° oven for 40 to 45 min.

    Serves 4.
