Sharp & salty blue cheese, sweet red onion & slightly bitter baby spinach lend balance & texture to the rich ground beef in these elegant yet satisfying burgers. When buying, look for baby spinach with dark, vibrant green leaves; avoid those that show signs of bruising or wilting.
List of Ingredients
Blue Cheese Stuffed Burger w/Red Onion & Spinach
1 lb ground beef
1 tablespoon worcestershire sauce
1 teaspoon freshly ground black pepper
1/3 to 1/2 cup crumbled blue cheese (about 2 ozs), divided
1 medium red onion, cut into thin slices
olive oil
salt
4 hamburger buns, split
1 cup fresh baby spinach
Recipe
In a large bowl, combine the beef, worcestershire sauce & pepper.
On waxed paper, shape the beef mixture into eight this 4 inch diameter patties.
Place 1 tablespoon of the blue cheese into the centers of four of the patties.
Top with the remaining four patties, pinching the edges to seal.
Brush the onion slices with the olive oil, then sprinkle them with some salt.
Place the burgers & onion slices on the rack of an uncovered grill directly over medium-high heat.
Grill for 5 minutes per side or until the burgers are done (160º to 165ºF).
Brush the cut sides of the buns with some olive oil.
Grill the buns, cut side down, for the last minute of grilling time.
To serve:
Serve the burgers on the toasted buns with the grilled onion slices, spinach & the remaining blue cheese.
