    Spud-Burgers Deluxe


    1 lb. extra lean ground beef
    1 medium yellow onion, minced
    1/4 c. firmly packed mashed potatoes
    1/3 c. minced cooked fresh beets or minced drained canned beets
    2 t. truffle mustard or Dijon-style mustard
    1 T. finely chopped fresh tarragon or 2 t. dried, crumbled
    1/2 t. freshly ground black pepper
    4 hard rolls, split and heated or toasted, to serve
    Hamburger accompaniments: lettuce, tomato, cheese of
    your choice, relish, ketchup, and mustard, to serve

    Preheat the grill or broiler.


    To prepare the burgers: In a medium bowl gently stir
    together the beef, onion, mashed potatoes, beets, mustard,
    tarragon, and pepper until well blended. Shape into 4 flat
    4-inch patties. Reserve at room temperature until ready to
    use.

    For the grill: Over hot coals, grill the hamburgers about
    5 inches from the coals, for 3 to 4 minutes per side for rare, 4 to 5 minutes per side for medium-rare, and 5 to 6 minutes per side for well done.

    For the broiler: Broil about 4 to 5 inches from the heat,
    4 to 5 minutes per side for rare, 5 to 6 minutes per side for
    medium-rare, and 6 to 7 minutes per side for well done. (Note:

    Grill and broiler times are approximate. Cook to desired doneness and remember that the meat will cook a little more even after it has been removed from the heat.)

    To serve, assemble the hamburgers on rolls, and pass with the
    accompaniments, allowing the guests to help themselves.

    Serves 4.
