Italian Fried Steak w/Roasted Pepper Pesto
1/2 cup seasoned fine dry bread crumbs
1/2 cup grated Romano or parmesan cheese, divided
1 egg
2 tablespoons water
1 1/2 lbs beef cubed steak
salt
ground black pepper
olive oil
1 - 12 oz jar roasted red sweet peppers, drained
2/3 cup fresh basil leaves, divided
Recipe
In a shallow dish, combine the bread crumbs & half of the cheese.
In another shallow dish beat together the egg & water.
Cut the meat into eight equal size portions.
Lightly sprinkle the meat with salt & black pepper.
Dip the meat pieces into the egg mixture, then the bread crumb mixture, pressing lightly to coat.
In a 12 inch skillet, heat 1 tablespoon of olive oil over medium-high heat.
Working in two batches, cook the steak for about 5 minutes per side, adding more olive oil as needed.
Remove the cooked meat to a platter, covering it to keep it warm.
Carefully wipe the skillet clean.
Meanwhile, for the sauce:
In a blender or food processor, combine the sweet peppers & the remaining cheese.
Process until nearly smooth.
Finely chop 1/2 cup of the basil & set it aside.
Transfer the pepper mixture to a hot skillet & heat it through.
Remove the mixture from the heat.
Stir in the finely chopped basil.
Pour the sauce over the steaks.
Sprinkle it with the remaining basil.
