Recipe Introduction
The Hollywood is a local restaurant ten miles north of Tunica, Mississippi, fifteen minutes from the Tennessee-Mississippi state line. It's open only on weekends and has a loyal clientele that loves to sample the specializes of the house: fried catfish, frog legs, steaks and fried dill pickles. The restaurant is a 130 year old building that was once a plantation a commissary, a stage coach stop and a railroad station. This dish was created on the spot when the kitchen had no more catfish to fry, but lots of batter and lots of pickles.
List of Ingredients
The Hollywood Fried Dill Pickle
vegetable oil
1 cup flour
1 tbsp. baking powder
1 tbsp. paprika
2 1/4 tsp. red pepper
1/4 cup milk
1 can beer
1 quart dill pickles sliced thick or thin
Recipe
Heat vegetable oil to 350 to 375.
Mix dry ingredients with milk.
Add enough beer to make medium thick batter.
Dredge pickles in batter to coat lightly and fry at once in hot oil.
Batter will puff and turn a deep red brown color.
Serve hot.
Makes 1 quart fried dill pickles.
