    Chipotle Fried Catfish

    Chipotle Fried Catfish


    1 1/2 pounds catfish fillets, cut into 1-inch pieces
    1/4 cup Chipotle Pepper Sauce
    3/4 cup cornmeal
    3/4 cup corn flour
    1 1/2 teaspoons salt
    Oil for deep-frying

    Recipe


    Place catfish in a bowl and sprinkle with Chipotle Pepper
    Sauce; toss well.

    Cover and marinate in refrigerator for 30 minutes.

    Combine cornmeal, corn flour, and salt in another bowl and mix well.

    Heat 2 inches of oil in a deep-fryer to 375蚌.

    Coat catfish pieces with cornmeal mixture and fry 5 minutes or until golden brown and fish flakes easily when tested with a fork.

    Drain on paper towels and serve hot.

    Makes 4 to 6 servings
